Get the FREE iPhone App from Red Box Diamond website.  It is the hottest thing for you iPhone.  The new App allows you to create a diamond ring on your cell phone, you can view the ring at actual size and try it on.  It is only available right now for iPhone, hopefully they will have it available for other cell phones in the near future.

Vegatable Lover’s Chicken Soup

I thought I would share great recipes, that I have found over the years, at least I thought they were great.  I love to try something new, sometimes it just doesn’t work out like you hoped, but it is fun trying them out.  I love to cook when I have the time and the ingredients, lol.  So I will upload recipes from time to time, I hope you like them, like we did.  Bon Apetit!

Vegetable Lover’s Chicken Soup

Ingredients

  • 1 tablespoon extra-virgin
  • 8 ounces chicken tenders, cut into bite-size chunks
  • 1 small zucchini, finely diced
  • 1 large shallot, finely chopped
  • 1/2 teaspoon Italian seasoning blend
  • 1/8 teaspoon salt
  • 2 plum tomatoes, chopped
  • 1 14-ounce can reduced-sodium chicken broth
  • 1/4 cup dry white wine
  • 2 tablespoons orzo or other tiny pasta, such as farfelline
  • 1 1/2 cups packed baby spinach

Directions

Heat oil in a large saucepan over medium-high heat. Add chicken and cook, stirring occasionally, until browned, 3 to 4 minutes. Transfer to a plate.

Add zucchini, shallot, Italian seasoning and salt and cook, stirring often, until the vegetables are slightly softened, 2 to 3 minutes. Add tomatoes, broth, wine and orzo (or other tiny pasta); increase heat to high and bring to a boil, stirring occasionally. Reduce heat to a simmer and cook until the pasta is tender, about 8 minutes, or according to package directions. Stir in spinach, the cooked chicken and any accumulated juices from the chicken; cook, stirring, until the chicken is heated through, about 2 minutes.

The birthstone for August is “PERIDOT” (pronounced “pear-uh-doe”, the “t” is silent).    Beautiful vivid green with a slight hint of gold, the perfect gemstone to go with that light summer wardrobe.

August 26th“National Dog Day” Today is the day to honor dogs for all they do in our lives and give us so much love.  In addition to giving us companionship and love…dogs watch over our homes, they are used in rescues and for the blind.  So give your dog a BIG HUG today and maybe play with him also.
